  • Our omakase journey begins with a series of meticulously crafted small plates, featuring the finest local, in-season ingredients and premium seafood from Japan. Each course highlights traditional techniques alongside contemporary methods, like dry-aging and sous-vide, enhancing the natural flavours and textures of every ingredient.

  • Seated at our intimate 16-seat C-shaped sushi counter, guests enjoy an authentic omakase experience with multiple seatings available daily. Our first seating begins at 5:30 PM, with the last at 8:30 PM, from Tuesday to Saturday. Each dining experience typically lasts 1.5 to 2 hours, offering a relaxed yet immersive journey through Japanese culinary artistry.

  • Our beverage pairings are thoughtfully curated to complement the omakase experience, featuring selections of wine, sake, and liqueur. We also offer flights of craft sake for those wishing to explore unique flavours. Corkage fees are $50 per bottle and $95 for magnums.

Head Chef

Since the age of 18, Chef Hiroki Takai has shared his passion for Japanese cuisine, honing his skills across a range of traditional settings, from izakaya and yakitori to sushi. In 2014, driven by a desire to expand his culinary perspective, Hiroki moved to Toronto, where he soon sought out the esteemed Sushi Kaji to pursue his dream of becoming a sushi chef.

Training intensively under the guidance of the legendary Chef Mitsuhiro Kaji for nearly a decade, Hiroki earned the position of sous chef as Chef Kaji’s trusted right hand.

Now, as Head Chef at IBUSHI, Hiroki brings his expertise to a new level, blending traditional Japanese techniques with locally sourced Canadian ingredients. His vision offers a refined sushi experience that combines authenticity with innovation, delighting diners in the Greater Toronto Area and beyond.

Yutaka Tokuda

General Manager

Born in Japan and raised in Bangkok, Yutaka Tokuda’s multicultural upbringing has deeply influenced his approach to hospitality and Japanese cuisine. After spending time immersed in the vibrant culture of Hong Kong, he established himself in Toronto, bringing a global perspective to his work. His experiences align seamlessly with Ibushi’s philosophy:

With years of experience managing some of Toronto’s top restaurants, Yutaka has honed his skills in menu development, beverage pairing, and creating exceptional guest experiences. As co-creator of IBUSHI, Yutaka collaborates with Chef Hiroki Takai to craft a concept that balances authenticity with innovation. His vision brings to life a dining experience that celebrates the artistry of Japanese cuisine while embracing the diversity of the Greater Toronto Area.

What is the menu like?

Our $175 omakase menu features 4-6 small plates highlighting seasonal fish and vegetables, sourced both locally and from Japan. The meal then progresses through 9-11 courses of seasonal nigiri, finishing with a handroll, noodle soup, and dessert.

Do you offer a beverage pairing?

Yes, we offer beverage pairings including wine, sake, and liqueur. For those interested in exploring more, sake and wine by the glass and carafe are also available.

What is your cancelation policy?

Cancellations made less than 48 hours before the reservation, as well as no-shows, may incur a cancellation fee.

For parties of 5 or more, cancellations made less than 5 days in advance will be subject to a fee.

Where are you located?

We are located in the Commerce Gate shopping plaza (505 Hwy 7), section C, in between Korean Grill House, and Nian Yi Kuai Zi.

Is there parking nearby?

Yes, there are plenty of parking spaces available in front of our restaurant, located within the Commerce Gate shopping plaza.

Additionally, free underground parking is available.

How does your experience work?

Guests are seated at our 16-seat C-shaped sushi counter.

We offer multiple seatings daily, starting at 5:30 PM with the last seating at 8:30 PM, Tuesday to Saturday.

The entire omakase experience typically lasts 1.5 to 2 hours.

Do you accommodate dietary restrictions?

We accommodate various dietary restrictions and allergies to the best of our ability, including gluten-free options.

However, we are currently unable to accommodate soy-free and fish-free requests. Please notify us at least 48 hours in advance if you have dietary restrictions.

Can I bring my own bottle of wine or sake?

Yes, guests may bring their own wine or sake. Corkage fees are $50 per bottle (720ml or 750ml) and $95 per magnum (1.5L or 1.8L).

Do you offer a kid’s menu?

We do not offer a kid’s menu.

While we warmly welcome young patrons, due to our matured setting and counter-only seating, we recommend that children be at least 12 years of age or older to fully enjoy the Ibushi experience.
